Can you win with just a king?

No. A lone king can never deliver checkmate, so it cannot win — the best it can do is draw. A king plus a single knight, or a king plus a single bishop, also cannot force mate against a lone king. You need at least a rook, a queen, two bishops, or a bishop and knight to mate.
